  • 1 1/2 cups all-purpose plain flour, spooned and leveled
  • 3/4 cup granulated sugar
  • 2 1/4 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup dairy-free yogurt or unsweetened applesauce
  • 1/3 cup dairy-free milk
  • 1/3 cup neutral flavored oil
  • 1 tablespoon apple cider vinegar or lemon juice (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the strawberry filling by combining chopped strawberries, sugar, lemon juice, and flour in a bowl; set aside.
  2. Preheat your oven to 350°F (175°C) and prepare your baking pan with grease or parchment paper.
  3. In one mixing bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  4. In another bowl, combine melted vegan butter, yogurt (or applesauce), dairy-free milk, oil, vinegar (if using), and vanilla extract until well mixed.
  5. Gently combine the wet and dry ingredients without overmixing.
  6. Layer half of the batter in the pan followed by half of the strawberry mixture; repeat with the remaining batter and strawberries on top.
