  • 50g caster sugar
  • 1 pack active dry yeast (approx 7g)
  • 480g plain flour (plus extra for dusting)
  • 100g fresh or frozen raspberries
  • 130g strawberry jam
  • 60g dairy-free cream cheese
  • 150g icing sugar

Instructions

  1. Melt dairy-free butter in a mixing bowl. Add room temperature dairy-free milk and caster sugar; whisk together.
  2. Sprinkle active dry yeast over the mixture and let it sit until foamy (about 5-10 minutes).
  3. Gradually add plain flour until a dough forms. Knead on a floured surface for about 10 minutes until smooth.
  4. Let the dough rise covered in a warm place for about an hour.
  5. For the filling, simmer raspberries with caster sugar, water, and cornflour until thickened. Stir in strawberry jam and chopped strawberries.
  6. Roll out the dough, spread the filling evenly, roll tightly into a log, and slice into equal pieces.
  7. Place on a lined baking tray, cover, and let rise again for about 30-45 minutes.
  8. Bake at 180°C (350°F) for 25-30 minutes until golden brown.
  9. Prepare glaze by beating together dairy-free butter, cream cheese, icing sugar, and vanilla extract until smooth; drizzle over warm rolls.
