  • 10 oz pasta (fusilli or whole wheat)
  • 1 cucumber (diced)
  • 1 pint tomatoes (halved)
  • 1.5 cups spinach (roughly chopped)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup feta cheese (crumbled; goat cheese optional)
  • 1/4 cup Kalamata olives (pitted and halved)
  • 1/4 cup olive oil
  • 3.5 tbsp red apple vinegar
  • 1 tsp Dijon mustard
  • 1.5 tsp oregano
  • 1 tsp dried mint
  • 2 cloves garlic (minced)
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper (freshly ground; adjust to taste)
  • 1/8 tsp red pepper flakes (optional)

Instructions

  1. In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water; set aside.
  2. While the pasta cooks, prepare the vegetables by dicing the cucumber, halving the tomatoes, chopping the spinach, and slicing the red onion.
  3. In a mixing bowl, whisk together olive oil, red apple vinegar, Dijon mustard, oregano, dried mint, minced garlic, salt, and black pepper until smooth.
  4. In a large mixing bowl, combine cooked pasta with vegetables, feta cheese, and Kalamata olives. Pour dressing over the salad and toss gently until well coated.
  5. Cover with plastic wrap or transfer to an airtight container; refrigerate for at least 30 minutes before serving.
