  • 2 cups boneless skinless chicken breasts
  • 2.5 cups shredded Monterey Jack cheese (or Pepper Jack)
  • 5 ounces cream cheese
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 tablespoon taco seasoning
  • 2 cups chicken broth
  • 1 cup sour cream
  • 10 soft flour tortillas

Instructions

  1. Cook the chicken using your preferred method until fully cooked, then shred it into pieces.
  2. Preheat your oven to 350°F (175°C) and grease a baking dish.
  3. In a mixing bowl, combine the shredded chicken, 3/4 cup of cheese, garlic powder, and cream cheese until well blended.
  4. For the white sauce, melt butter in a saucepan, stir in flour and taco seasoning for one minute, then gradually whisk in chicken broth until smooth. Add remaining cheese, sour cream, and diced green chilies; remove from heat.
  5. Lay out each tortilla and fill them with the chicken mixture; roll tightly and place seam-side down in the baking dish.
  6. Pour the white sauce over the enchiladas, top with remaining cheese, and bake for about 22 minutes. Broil for an additional 3 minutes to brown.
