  • 8 ounces white chocolate, melted and cooled
  • 1 cup fresh strawberries, sliced
  • 1/4 cup strawberry jam
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. For the crust: Combine graham cracker crumbs and melted butter in a medium bowl. Press into the bottom of the prepared pan.
  3. For the filling: In a large mixing bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition. Gently fold in the melted white chocolate.
  4. Pour the filling over the crust and bake for 50-60 minutes or until edges are set.
  5. Allow to cool in the pan for 10 minutes before removing the sides of the springform pan.
  6. Prepare the strawberry ganache by heating strawberry jam and heavy cream in a small saucepan until combined.
  7. Top cheesecake with sliced strawberries and drizzle with ganache. Chill for at least 4 hours or overnight before serving.
