  • 2 stalks celery (finely chopped)
  • 4 cups low sodium vegetable stock or water
  • 1 teaspoon turmeric powder
  • ¼ teaspoon ground black pepper
  • Salt to taste
  • Red chili flakes (to taste)
  • Handful of chopped cilantro
  • 1 tablespoon lime or lemon juice
  • 4 baby bok choy (washed and cut)
  • 1 onion (diced)
  • 2 cups mushrooms (quartered)
  • 1 cup thin rice noodles

Instructions

  1. Gather and chop all the vegetables; measure spices for smooth cooking.
  2. In a large pot over medium heat, add oil if using, then sauté garlic and ginger for about 2 minutes until fragrant.
  3. Add diced onion, celery, and mushrooms; cook until tender, around 5–7 minutes.
  4. Pour in vegetable stock along with bay leaves, turmeric, black pepper, salt, and red chili flakes; stir to combine.
  5. Bring to a gentle boil, then reduce heat and simmer for about 10 minutes.
  6. Stir in bok choy and rice noodles; cook for an additional 5–7 minutes until noodles are tender.
  7. Remove from heat; stir in lime juice and chopped cilantro before serving.
